Cajun spiced salmon with new potatoes and greens
Ingredients
- 4 x tbs olive oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 tsp wholegrain mustard
- Salt and pepper
- Fillet of salmon (you can also use other fish or a chicken fillet)
- Gourmet potatoes, cut into chunks
- 3 tbs Cajun spice * – consisting of a mix of onion powder, garlic powder, mustard powder, cumin powder, paprika, salt, black pepper and cayenne pepper
- Hollandaise sauce
- Silverbeet or spinach
Method
- Blanch or roast the potatoes until tender.
- Heat a pan to medium-hot heat and add 2 tbs olive oil.
- Add chopped onions, crushed garlic, and wholegrain mustard.
- Sauté for 2 minutes then add the blanched potatoes to the pan. Season with salt and pepper and continue to stir through for 3 minutes.
- Remove from heat and set aside.
- Rub the salmon all over with the Cajun spice.
- Add the remaining 2 tbs olive oil to a hot pan cook the salmon, skin side down until crispy. Turn the salmon and fry other side for around 4 – 5 minutes.
- In the same pan, sauté the silverbeet/spinach for 10 seconds
- Arrange the cooked potatoes and silverbeet/spinach on a serving plate, then place the salmon on top.
- Pour the hollandaise sauce on top (add lemon zest into hollandaise sauce if you like)
- Serve and enjoy!
*You can also use premixed Cajun spice.
