Cajun spiced salmon with new potatoes and greens


  • 4 x tbs olive oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 2 tsp wholegrain mustard
  • Salt and pepper
  • Fillet of salmon (you can also use other fish or a chicken fillet)
  • Gourmet potatoes, cut into chunks
  • 3 tbs Cajun spice * – consisting of a mix of onion powder, garlic powder, mustard powder, cumin powder, paprika, salt, black pepper and cayenne pepper
  • Hollandaise sauce
  • Silverbeet or spinach


  1. Blanch or roast the potatoes until tender.
  2. Heat a pan to medium-hot heat and add 2 tbs olive oil.
  3. Add chopped onions, crushed garlic, and wholegrain mustard.
  4. Sauté for 2 minutes then add the blanched potatoes to the pan. Season with salt and pepper and continue to stir through for 3 minutes.
  5. Remove from heat and set aside.
  6. Rub the salmon all over with the Cajun spice.
  7. Add the remaining 2 tbs olive oil to a hot pan cook the salmon, skin side down until crispy. Turn the salmon and fry other side for around 4 – 5 minutes.
  8. In the same pan, sauté the silverbeet/spinach for 10 seconds
  9. Arrange the cooked potatoes and silverbeet/spinach on a serving plate, then place the salmon on top.
  10. Pour the hollandaise sauce on top (add lemon zest into hollandaise sauce if you like)
  11. Serve and enjoy!

*You can also use premixed Cajun spice.
