Chicken Pasta Bake

This easy and delicious recipe uses leftover cooked chicken and store cupboard ingredients.
Ingredients:
White sauce
20g butter
20g plain flour
300ml milk
The bake
200g pasta
100g chicken (cooked), chopped
100g frozen peas (or tinned)
100g frozen sweetcorn (or tinned)
2 tsp basil (or oregano/parsley), dried
cheese (topping), grated
Method:
Sauce
- Melt the butter in a saucepan on a low heat, stir in the flour and cook for a couple of minutes, stirring constantly, until you have a smooth paste
- Slowly pour the milk in, stirring all the time, bring to the boil, stirring with a balloon whisk, until thickened
- Add flavourings/seasoning (black pepper, mustard, grated nutmeg) to taste and stir well
The Bake
- Preheat oven 180’C/Gas mark 4
- Cook the pasta according to the packet and place in an oven proof dish
- Cook the chicken (if not already cooked) and add to the pasta mix
- Add the sweetcorn, peas and herbs & pour the white sauce in, sprinkle some grated cheese on top and cook in the oven for about 30 minutes
