Watermelon, Feta and Basil Salad

Sai Sodagam, Kitchen Manager at our 7 Saint Vincent village in Remuera, is famous for his fabulous fresh salads. Sai’s watermelon, feta and basil salad is guaranteed to perfectly accompany any BBQ dish.


½ red watermelon (cut into pieces and keep it refrigerated)
100g creamy feta diced into small cubes
2 Tbsp toasted pumpkin seeds
½ cup torn fresh basil (do not use a knife to chop them, just tear them with your fingers before use)

Lemon dressing

Juice of 1 lemon
6 Tbsp extra virgin olive oil
Pinch of flaky salt and cracked pepper


1. Combine all of the ingredients and serve immediately.
2. Serve on a platter and garnish with an extra sprig of basil.


  • Use only desired amount of dressing. Leftover dressing can be stored in fridge for use with any green salad.
  • Serve immediately to ensure watermelon remains fresh and firm.
