Banana bread pudding with ice cream and walnuts

A recipe from our friends at Love Food Hate Waste

Give overripe bananas a second life with this cozy Banana Bread Pudding. By combining stale bread and ripe bananas, you create a warm, waste-free dessert that's rich, comforting, and perfect for reducing food waste.

Ingredients

  • 2 cups Old Bread, cut into 2-3 cm pieces (thawed, if using from freezer)
  • 1-2 cups Sliced Brown Bananas (frozen or fresh)
  • 4 tbsp Butter, melted
  • 2 Eggs
  • ¼ cup Rapadura Sugar
  • 1 cup Whole Milk
  • 1 tsp Vanilla
  • ½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • ¼ tsp Sea Salt

Method

  1. Preheat oven to 175°C fan bake.
  2. Grease a 28cm x 18cm baking dish with butter and add bread cubes & banana slices.
  3. Cover bread and bananas with melted butter and mix to coat.
  4. In a medium bowl, beat eggs and sugar with a fork.
  5. Add milk, vanilla, spices, and sea salt, mix thoroughly.
  6. Pour over bread and toss until coated.
  7. Bake uncovered for 20-30 minutes, or until the egg is cooked through and nicely browned on top.

Cooking tips

  • Prevent bananas from going soft by placing them in the fridge. The skin may brown, but the fruit stays firm for 5-7 days.
