Creamy chicken soup

A recipe from our friends at Love Food Hate Waste
There’s nothing quite like a steaming bowl of creamy chicken soup to warm you from the inside out. Packed with hearty vegetables, tender shredded chicken, and your choice of comforting spices, this nourishing winter classic is endlessly versatile. Whether you're fighting off the cold or just craving a cosy night in, this simple soup is sure to hit the spot.
Ingredients
- Approx. 8 cups stock or water
- 6-8 cups chopped veggies or frozen veggies
- Your favorite herbs and spices
- 1 can (400ml) coconut milk or 300ml cream or 2 cups milk
- Approx. 2 cups cooked shredded chicken
- Salt and pepper
- Optional: curry powder or curry paste
Method
- Place stock and veggies in a large pot. Bring to a boil over medium high heat.
- Add herbs and spices and curry powder if using. Simmer until the vegetables are soft.
- Remove from the heat and add coconut milk.
- Blend until smooth using a stick blender.
- Place the soup back on the heat and cook until heated through.
- Stir through the chicken and cook for a few minutes or until the chicken is heated through.
- Season to taste with salt and pepper. Serve and enjoy.
- Vegetarian alternative: Substitute chicken for 1-2 cans of drained and rinsed beans or lentils. Dried lentils or split peas also work well in this dish, so you don’t need to stick with canned for this one.
