Miso glazed sweetcorn

A recipe from our friends at Love Food Hate Waste
Enjoy this delicious miso-glazed sweetcorn dish, where each bite is coated in a luscious, savoury glaze, creating a perfectly balanced flavour that’s both comforting and vibrant.
Best enjoyed at the height of summer, this seasonal favourite makes an ideal standout side for warm-weather meals, gatherings, or relaxed alfresco dining.
Serves: 6
Preparation time: 10 minutes
Ingredients
- 2 corn cobs
- 1 tablespoon miso paste
- 1 teaspoon runny honey
- 1 tablespoon soy sauce
- 2 teaspoon sesame oil
- ½ cup fresh coriander
- 2 tablespoon sesame seeds, toasted
- 2 teaspoon fresh chilies, chopped
- 1 tablespoon fresh ginger, grated
Method
- Cut corn cobs in half. Then each half down the middle, then each half in four, Removing any excess core.
- For the paste in a small bowl combine well the miso, honey, ginger, soy sauce and sesame oil.
- Preheat the BBQ to medium heat. Brush a little paste over the ribs.
- Place them onto the BBQ cooking for 2 or 3 minutes then turning for a further 5 or until cooked and nicely charred.
- Remove to a platter, brush with any extra paste, and sprinkle with seeds and coriander.
- Serve hot with a sprinkle of chilli.
