Veggie fritters

A recipe from our friends at Love Food Hate Waste

These easy fritters use up leftover veggies, saving them from the bin while creating a delicious meal!

Ingredients:

  • 2 cups mixed leftover vegetables (grated or finely chopped) – e.g., zucchini, carrot, kumara, broccoli stalks
  • ½ cup chickpea flour (or regular flour)
  • ½ tsp baking powder
  • 1 tsp ground cumin (or your favourite seasoning)
  • ¼ cup chopped fresh herbs (or 1 tsp dried)
  • ½ cup water (adjust as needed)
  • Salt and pepper to taste
  • 1 tbsp oil for frying

Method:

  1. Prepare veggies – Grate or finely chop any leftover vegetables you have.
  2. Mix the batter – In a bowl, combine the chickpea flour, baking powder, spices, and water until smooth.
  3. Fold in the veggies – Stir in the vegetables and herbs, ensuring they are well coated in the batter.
  4. Fry the fritters – Heat a pan with a little oil and spoon in the mixture. Flatten slightly and cook for 2-3 minutes per side until golden brown.
  5. Serve & enjoy – Pair with a yogurt dip, chutney, or fresh salad!

Top tip: Leftover fritters can be frozen and reheated, making them a great waste-free meal prep option!
